Where did she come from?

The Food channel, local restaurants, and bookstores have all conspired to inspire and create the vision of Pinx (pronounced Pinks). This Filipino born local upstart – winner of the 2011 San Francisco Street Food Festival vote for your vendor contest – began as a foodie frequenting many local establishments until she realized she could make these same dishes at home. Her passion has become a style all her own: Elevated Comfort Food.
At home, a dining table for six has become a table for ten on any given night. There is nothing more satisfying to Pinx than to enjoy the happy faces shared by friends and family after partaking in one of her many feasts. After hosting countless events and gatherings over the years, the pressure from friends and family to open her restaurant reached unprecedented levels just one month before the contest began. Being urged to enter by a dear friend, she did so…and the rest is history.
Pinky has the ultimate goal of opening a quaint little breakfast spot in the East Bay with her husband, featuring menu items such as Sweet Potato Pie Waffles, Red Velvet Pancakes, Maple Glazed Bacon, Red White and Blue Country Potatoes, and Shrimp and Grits just to name a few. Until she is able to bring that vision to a location near you, she will be bringing her Southern Gourmet style to catering events, pop up venues, and a food truck or three around the San Francisco Bay Area.

Craig and Pinky Cooper collaborate to create the memorable creations found at Pinx. Because Pinky is a Savant, there is no outlandish combination that Craig can propose (Red Velvet Pancakes, Sweet Potato Pie Waffles, Ube Waffles, Smackin' Berry Fried Chicken), she is unable to bring to life. As long as there are San Francisco Bay Area eateries, Iron Chef's, Diners Drive-Ins and Dives, Top Chef, episodes of "Chopped" on TV, and local ingredients available to be re-purposed, Pinx will continue to make an impact on the culinary scene with her Elevated Comfort Food point of view.
